Herbert Eugene Eglie, 85, of Minerva died on March 1, 2021 following a long illness.
Herb was born on June 11, 1935 to Russell and Ida Davis Eglie, the youngest of three boys. He attended Bunker Hill Grade School and graduated from Minerva High School. Herb entered Ohio University on a scholarship to study law, but decided that was not his path. He was drawn to food services, and graduated in 1957 from the College of Arts and Sciences of Ohio University.
Herb was a food service director for 32 years for Aramark. He married Margaret Pollock in July of 1982 and they built a home on top of one of the hills on Herb’s family farm outside of Minerva. Margaret died in October of 2013.
Because of all the scholarships that helped him go to college, he and Margaret established the Russell W. and Ida L. Davis Eglie Memorial Scholarship at Ohio University in 2007 to honor his parents. After Margaret’s death, Herb established the Herbert E. Eglie Patient Advocacy Fund at OU to help train health care students to be patient advocates.
Herb served one term as West Township trustee and had been a Farm Bureau member since 1982, served on the board for many years, and was awarded the Distinguished Service Award.
He is survived by his three stepchildren, Marcia (Paul) Farabee of Annandale, VA, Fred (Terry) Pollock of Rittman, and Ken (Kari) Pollock of Warner Robins, GA; five grandchildren; three great-grandchildren; one brother; a niece; and many cousins.
The family wishes to express its gratitude to the staff of Altercare of Alliance and Absolute Hospice for their care of Herb for the past few months.

Interment will be private.
